Product Spotlight: Gluten-free Chocolate Cake from Inspiration Mixes

As a dedicated gluten-free co-packer, we have the privilege of helping incredible entrepreneurs bring their products to market. It’s our pleasure to highlight some of these amazing people and their phenomenal foods.

This month, we’re talking about Inspiration Bakery & Mixes and, in particular, their gluten-free chocolate cake. This cake is beyond delicious, full of rich chocolate, and practically indistinguishable from any gluten chocolate cake mix. It’s especially wonderful because it’s all gluten-free!

We recently talked to Cap & Cheryl Caplan, co-owners of the company, to find out how they got invested in Inspiration Mixes and what their products are all about.

GF Blends: How long have you been with Inspiration Mixes?

Cap: Cheryl and I are retired federal employees. We’ve invested with small businesses before, and in 2017, we were approached by the founder, Debbie Caterson and her sister Cathy for some funding money. Over time, we became more invested, especially when Cheryl retired in 2018, the production manager left, and we bought out Cathy’s share. We now own half of the company. We do most of the marketing and the day-to-day operations.

GF Blends: What are some of the products Inspiration Mixes sells?

Cheryl: We make a variety of goods from pizza crusts, flatbreads and hamburger buns to nine mixes for home bakers. We also provide baked goods for our Saturday Gluten-Free Bakery, where we sell additional ready-to-eat things like scones, cinnamon rolls, and carrot cakes for local customers.
GF Blends: Speaking of mixes, you have a chocolate cake mix that is the talk of town. How long have you had it?

Cap: Debbie and Cathy started working on recipes back in 2009. They perfected it by 2012. It’s been in continuous production since then. It’s non-GMO and sourced as close to organic as possible. We get the highest quality product because the ingredients are the best. Most people can’t even tell that it’s gluten-free at all.

Cheryl: They developed it to be used two ways – as a cake mix and as a brownie. We’ve since formulated a separate recipe specifically for a brownie and so that’s separate now with the fudgy and gooey texture that people want. The cake mix can make a good size cake or you can make a layered cake as well. You have a lot of choices when using it. It has such a great consistency and texture for it. When you cut into it, it has a nice light texture that many people don’t associate with gluten-free.

GF Blends: What was the toughest part of getting the recipe right?

Cap: The toughest part was for Debbie’s husband (Baxter) as the official tester to eat more and more of it to get it right. It’s Debbie’s favorite and so she spent a lot of time on it. Debbie’s great grandfather was a baker with a lot of family recipes and so they constantly tinkered with those recipes.
GF Blends: Where can people find your mixes?

Cheryl: People can purchase them on our website. We also have an Etsy store and we will soon be on Amazon again with new packaging for five mixes – cake, brownie, batter mix, pancake and waffle mix, baking mix.
